Marylyn’s Cheese Blintzes
Blintzes are a traditional Jewish dish that originated in Eastern Europe and are often served during holidays and special occasions.

In a bowl, combine cream cheese, cottage cheese, sugar, vanilla extract, and egg. Mix well.

Heat a non-stick skillet over medium heat and melt butter.

Pour 1/4 cup of pancake batter onto the skillet and spread it into a thin circle.

Cook for 1-2 minutes until the edges start to brown.

Flip the pancake and cook for another 1-2 minutes.

Remove the pancake from the skillet and repeat with the remaining batter.

Spoon 2 tablespoons of the cheese filling onto each pancake and fold the sides to form a blintz.

Return the blintzes to the skillet and cook for 2-3 minutes on each side until golden brown.

Serve hot, dusted with powdered sugar.
