  2. Heat a non-stick skillet over medium heat and melt butter.
  3. Pour 1/4 cup of pancake batter onto the skillet and spread it into a thin circle.
  4. Cook for 1-2 minutes until the edges start to brown.
  5. Flip the pancake and cook for another 1-2 minutes.
  6. Remove the pancake from the skillet and repeat with the remaining batter.
  7. Spoon 2 tablespoons of the cheese filling onto each pancake and fold the sides to form a blintz.
  8. Return the blintzes to the skillet and cook for 2-3 minutes on each side until golden brown.
  9. Serve hot, dusted with powdered sugar.
