In a bowl, combine mandarin orange juice and sugar. Stir until sugar dissolves.

Add heavy cream and vanilla extract to the bowl. Stir well.

Pour the mixture into an ice cream maker and churn according to the manufacturer's instructions.

While the ice cream is churning, prepare the sesame brittle. In a small pan, toast sesame seeds over medium heat until golden brown.

Add honey to the pan and stir until the mixture thickens.

Remove the pan from heat and pour the sesame mixture onto a greased baking sheet. Spread it out evenly.

Let the sesame brittle cool and harden for about 4 hours.

Once the ice cream is done churning, transfer it to a container and freeze for at least 4 hours.
