Preheat the oven to 180°C (350°F). Roll out the puff pastry and cut out 12 rounds to fit into a muffin tin.

In a bowl, mix together the curd cheese, caster sugar, unsalted butter, egg yolks, lemon zest, ground almonds, and currants.

Spoon the cheese mixture into the pastry cases and bake for 20-25 minutes until golden.

Allow the cheesecakes to cool in the tin for 10 minutes, then transfer to a wire rack to cool completely.

Dust with icing sugar before serving.
