  3. Add the blanched broccoli, vegetable broth, salt, and black pepper. Bring to a simmer and cook for 10 minutes.
  4. In a separate bowl, whisk together the low-fat milk and cornstarch until smooth. Slowly pour the mixture into the pot, stirring constantly.
  5. Continue to cook for another 5 minutes, or until the soup has thickened.
  6. Remove from heat and let the soup cool slightly.
  7. Using an immersion blender or regular blender, blend the soup until smooth and creamy.
  8. Serve hot, garnished with cheddar cheese.
