Low Fat Broccoli Bisque
Broccoli is a great source of vitamins K and C, as well as fiber.
This is vegetarian and gluten free recipe. Dish can be prepared in 45 minutes. Recipe requires some culinary experience (medium difficulty). Number of ingredients: 9.

In a large pot, bring water to a boil and blanch the broccoli for 2 minutes. Drain and set aside.

In the same pot, sauté the onion and garlic until translucent.

Add the blanched broccoli, vegetable broth, salt, and black pepper. Bring to a simmer and cook for 10 minutes.

In a separate bowl, whisk together the low-fat milk and cornstarch until smooth. Slowly pour the mixture into the pot, stirring constantly.

Continue to cook for another 5 minutes, or until the soup has thickened.

Remove from heat and let the soup cool slightly.

Using an immersion blender or regular blender, blend the soup until smooth and creamy.

Serve hot, garnished with cheddar cheese.
