Lemon-Ricotta Beignets
Beignets are a popular dessert in New Orleans and are often enjoyed with a cup of café au lait.

In a large bowl, whisk together the flour, baking powder, and salt.

In another bowl, combine the ricotta cheese, granulated sugar, egg, lemon zest, and lemon juice.

Gradually add the dry ingredients to the wet ingredients and mix until just combined.

Heat the vegetable oil in a deep pot or fryer to 350°F (175°C).

Drop spoonfuls of the dough into the hot oil and fry until golden brown, about 2-3 minutes per side.

Remove the beignets from the oil and drain on paper towels.

Dust the beignets with powdered sugar.
