  1. Preheat the oven to 350°F (175°C). Grease and flour a 9-inch springform pan.
  2. In a mixing bowl, combine the all-purpose flour, powdered sugar, and salt. Cut in the butter until the mixture resembles coarse crumbs. Press into the bottom of the prepared pan.
  3. Bake in the preheated oven for 15-20 minutes, or until golden brown. Remove from the oven and let cool.
  4. In a small bowl, sprinkle the gelatin over 1/4 cup of cold water. Let stand for 5 minutes to soften.
  5. In a saucepan, combine the lemon juice and sugar. Heat over medium heat until the sugar has dissolved. Remove from heat and stir in the softened gelatin until dissolved. Let cool to room temperature.
  6. In a mixing bowl, beat the egg whites until stiff peaks form. In another mixing bowl, beat the heavy cream until soft peaks form. Fold the whipped cream into the beaten egg whites.
  7. Gently fold the cooled lemon mixture into the whipped cream and egg white mixture until well combined.
  8. Pour the mousse mixture over the cooled crust in the springform pan. Smooth the top with a spatula. Refrigerate for at least 2 hours, or until set.
  9. In a small saucepan, melt the white chocolate over low heat, stirring until smooth. Remove from heat and let cool slightly.
  10. Remove the cake from the springform pan. Pour the melted white chocolate over the top of the cake, allowing it to drip down the sides. Decorate with fresh raspberries.
  11. Refrigerate for another 30 minutes, or until the white chocolate has set.
