Preheat the oven to 400°F (200°C).

Scrub the potatoes and prick them with a fork. Place them on a baking sheet and bake for 45-50 minutes until tender.

Remove the potatoes from the oven and let them cool slightly.

Cut the potatoes in half lengthwise and scoop out the flesh, leaving a thin shell. Place the flesh in a bowl.

In a separate bowl, combine the olive oil, lemon juice, dill, salt, and black pepper. Pour the mixture over the potato flesh and mash until well combined.

Spoon the mashed potato mixture back into the potato shells.

Sprinkle grated Parmesan cheese over the top of each potato.

Place the potatoes back in the oven and bake for an additional 10 minutes, or until the cheese is melted and golden.

Remove from the oven and let the potatoes rest for 10 minutes.

Serve hot, topped with sour cream and chopped chives.
