  2. Scrub the potatoes and prick them with a fork. Place them on a baking sheet and bake for 45-50 minutes until tender.
  3. Remove the potatoes from the oven and let them cool slightly.
  4. Cut the potatoes in half lengthwise and scoop out the flesh, leaving a thin shell. Place the flesh in a bowl.
  5. In a separate bowl, combine the olive oil, lemon juice, dill, salt, and black pepper. Pour the mixture over the potato flesh and mash until well combined.
  6. Spoon the mashed potato mixture back into the potato shells.
