Instructions

  1. Preheat the oven to 180°C (350°F). Crush the digestive biscuits into fine crumbs. Melt the butter and mix it with the biscuit crumbs. Press the mixture into the bottom of a greased springform pan.
  2. In a large bowl, beat the cream cheese, granulated sugar, lemon juice, and lemon zest until smooth. Add the eggs one at a time, beating well after each addition.
  3. Pour the cream cheese mixture over the biscuit base in the springform pan. Smooth the top with a spatula.
  4. Bake in the preheated oven for 45-50 minutes, or until the cheesecake is set and lightly golden. Remove from the oven and let it cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
  5. In a small saucepan, heat the strawberries and basil leaves over medium heat until the strawberries release their juices. Remove from heat and let it cool.
  6. Once the cheesecake has cooled, remove the springform pan and transfer the cheesecake to a serving plate. Spoon the strawberry and basil mixture over the top of the cheesecake.
  7. Dust the cheesecake with powdered sugar and garnish with additional basil leaves, if desired. Refrigerate for at least 2 hours before serving.
  8. Enjoy your delicious Lemon Cheesecake with Strawberry and Basil Topping!
