Biscoff cookies, also known as Speculoos cookies, originated in Belgium and are made with a blend of spices including cinnamon, nutmeg, and cloves.

Preheat the oven to 180°C (350°F).

In a food processor, pulse the Biscoff cookies until finely ground.

In a microwave-safe bowl, melt the unsalted butter.

In a mixing bowl, combine the ground Biscoff cookies, melted butter, granulated sugar, lemon zest, and lemon juice. Mix well.

Press the mixture into the bottom of a greased baking dish.

In a separate bowl, whisk together the eggs, all-purpose flour, baking powder, and salt.

Pour the egg mixture over the Biscoff crust.

Bake in the preheated oven for 25 minutes or until the top is golden brown.

Remove from the oven and let it cool for 30 minutes.

Sprinkle powdered sugar on top.
