Leftover Mashed Potato & Cheddar Soup
Mashed potato soup is a great way to use up leftover mashed potatoes and create a delicious and comforting meal.

In a large pot, melt the butter over medium heat. Add the diced onion and minced garlic, and cook until the onion is translucent.

Add the leftover mashed potatoes and vegetable broth to the pot. Bring to a boil, then reduce heat and simmer for 15 minutes.

Use an immersion blender to blend the soup until smooth. Alternatively, transfer the soup to a blender and blend until smooth, then return to the pot.

Stir in the shredded cheddar cheese and milk. Cook for an additional 5 minutes, or until the cheese has melted.

Season with salt and black pepper to taste.

Serve the soup hot, garnished with chopped chives.
