Leek and Wild Mushroom Stuffing

Preheat the oven to 350°F (175°C).

In a large skillet, melt the butter over medium heat. Add the leeks, mushrooms, garlic, thyme, salt, and pepper. Cook until the leeks are softened and the mushrooms are browned.

In a large bowl, combine the cooked leek and mushroom mixture with the bread cubes. Stir in the vegetable broth until the bread is moistened.

Transfer the stuffing mixture to a greased baking dish. Cover with foil and bake for 30 minutes.

Remove the foil and bake for an additional 10 minutes, or until the top is golden brown.

Let the stuffing rest for 10 minutes before serving.
