In a large mixing bowl, cream together the Biscoff spread, butter, brown sugar, and granulated sugar until light and fluffy.

Add the egg and vanilla extract, and mix until well combined.

In a separate bowl, whisk together the all-purpose flour, baking soda, and salt. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.

Stir in the oats, white chocolate chips, and pomegranate arils.

Drop rounded spoonfuls of dough onto a baking sheet lined with parchment paper.

Bake for 10-12 minutes, or until the edges are golden brown.
