In a saucepan, bring the vegetable broth to a boil.

Add the couscous, cover, and remove from heat. Let it sit for 5 minutes.

Fluff the couscous with a fork and transfer it to a large bowl.

In a separate pan, heat olive oil over medium heat. Add the diced bell peppers and sauté for 5 minutes.

Add the cherry tomatoes, cucumber, and red onion to the pan and cook for another 2 minutes.

Remove from heat and add the cooked vegetables to the bowl with couscous.

Add chopped parsley, mint, lemon juice, salt, and black pepper. Mix well.

Let the flavors blend for a few minutes before serving.
