Preheat the oven to 325°F (160°C) and line a 9x9-inch baking dish with parchment paper.

In a food processor, pulse the almond cookies until they resemble fine crumbs. Add melted butter and pulse again to combine.

Press the cookie mixture into the bottom of the prepared baking dish to form the crust.

In a large mixing bowl, beat cream cheese and granulated sugar until smooth. Add eggs, one at a time, beating well after each addition.

Stir in key lime juice, lime zest, and vanilla extract until well combined.

Pour the cream cheese mixture over the crust in the baking dish.

Bake for 25-30 minutes or until the edges are set and the center is slightly jiggly.

Remove from the oven and let it cool to room temperature. Then refrigerate for at least 2 hours to set.
