In a medium saucepan, bring the vegetable broth to a boil. Add couscous, cover, and remove from heat. Let it sit for 5 minutes.

In a large skillet, heat olive oil over medium heat. Add onion and garlic, and cook until softened.

Stir in cumin, cinnamon, salt, and black pepper. Cook for another minute.

Fluff the couscous with a fork and add it to the skillet. Stir well to combine.

Add dried apricots, dried cranberries, pistachios, parsley, mint, and lemon juice. Mix everything together.

Cook for 5 minutes, stirring occasionally.
