  2. Beat in the egg and vanilla extract.
  3. In a separate bowl, whisk together the all-purpose flour, baking powder, and salt.
  4. Gradually add the dry ingredients to the butter mixture and mix until well combined.
  5. Divide the dough in half, shape each half into a disk, wrap in plastic wrap, and refrigerate for at least 1 hour.
  6. Preheat the oven to 180°C (350°F) and line a baking sheet with parchment paper.
  7. Roll out one disk of dough on a lightly floured surface to a thickness of about 1/4 inch.
  8. Use cookie cutters to cut out desired shapes and transfer them to the prepared baking sheet.
  9. Repeat with the remaining dough.
  10. Use your thumb or the back of a spoon to make an indentation in the center of each cookie.
  11. Fill each indentation with a small amount of jelly.
  12. Bake for 10-12 minutes or until the edges are lightly golden.
