In a medium saucepan, bring vegetable broth to a boil. Add Israeli couscous and cook for 8-10 minutes until tender. Drain any excess liquid.

In a large skillet, heat olive oil over medium heat. Add chopped onion and minced garlic cloves. Sauté until onion is translucent.

Add cooked couscous, pecans, dried cranberries, fresh parsley, lemon juice, salt, and black pepper to the skillet. Stir well to combine.

Cook for an additional 2-3 minutes until heated through.

Remove from heat and let it rest for 5 minutes.
