  1. Rinse the barley under cold water and drain.
  2. In a large pot, combine the barley, coconut milk, and vegetable broth. Bring to a boil.
  3. Reduce heat to low, cover, and simmer for 30 minutes or until the barley is tender.
  4. In a separate pan, sauté the red bell pepper, green bell pepper, onion, and garlic until softened.
  5. Add the sautéed vegetables, curry powder, turmeric powder, cayenne pepper, salt, and black pepper to the pot with the barley. Stir well to combine.
  6. Cover and let the flavors meld for 10 minutes.
  7. Serve the Island Barley hot, garnished with fresh cilantro and lime wedges.
