Preheat the oven to 375°F (190°C).

Peel and core the apples.

Roll out the puff pastry and cut it into 6 squares.

Place an apple in the center of each square.

In a small bowl, mix together the brown sugar, cinnamon, nutmeg, and vanilla extract.

Fill each apple with the sugar mixture.

Fold the pastry over the apple and seal the edges.

Place the dumplings in a baking dish.

Pour water over the dumplings and dot with butter.
