  1. Press the tofu to remove excess water and cut it into cubes.
  2. Heat vegetable oil in a pan and fry the tofu until golden brown. Set aside.
  3. In the same pan, sauté the chopped onion, garlic, and ginger until fragrant.
  4. Add the sliced bell peppers and cook for a few minutes.
  5. Add the fried tofu back to the pan.
  6. Stir in soy sauce, chili sauce, salt, and black pepper.
  7. Cook for another 5 minutes.
  8. Garnish with chopped spring onions and cashew nuts.
  9. Serve hot with rice or noodles.
