  2. In a medium bowl, whisk together the flour, cocoa powder, baking soda, and salt.
  3. In a separate large bowl, cream together the butter, granulated sugar, and brown sugar until light and fluffy.
  4. Beat in the egg and vanilla extract.
  5. Gradually add the dry ingredients to the wet ingredients and mix until just combined.
  6. Drop rounded tablespoons of dough onto a baking sheet lined with parchment paper.
  7. Bake for 8-10 minutes, or until the edges are set.
  8. Allow the cookies to cool completely on a wire rack.
  9. Once the cookies are cooled, scoop a small amount of vanilla ice cream onto the bottom of one cookie and top with another cookie to create a sandwich.
  10. Roll the edges of the ice cream sandwich in sprinkles.
  11. Place the ice cream sandwich cookies in the freezer for at least 1 hour to set.
