  1. Preheat the oven to 325°F (163°C).
  2. In a mixing bowl, combine almond flour and melted butter. Press the mixture into the bottom of a greased 9-inch (23cm) springform pan to form the crust.
  3. In a separate mixing bowl, beat cream cheese, stevia, and vanilla extract until smooth. Add eggs one at a time, beating well after each addition. Stir in lemon juice and sour cream.
  4. Pour the cream cheese mixture over the crust in the springform pan. Smooth the top with a spatula.
  5. Bake for 50-60 minutes, or until the center is set and the top is lightly browned.
  6. Remove from the oven and let it cool in the pan for 10 minutes. Then, run a knife around the edge of the pan to loosen the cheesecake.
  7. Allow the cheesecake to cool completely, then refrigerate for at least 2 hours before serving.
  8. Serve chilled and enjoy!
