The original Philly cheesesteak sandwich is made with thinly sliced beefsteak and melted cheese, but this vegetarian version substitutes the beefsteak with sautéed vegetables and uses hummus as a flavorful spread.

Heat olive oil in a large skillet over medium heat. Add onion, bell pepper, and mushrooms. Cook until softened, about 5 minutes. Season with salt and black pepper.

Slice the hoagie rolls lengthwise and toast them.

Spread hummus on the bottom half of each hoagie roll. Top with the sautéed vegetables.

Place a slice of provolone cheese on top of the vegetables. Broil until the cheese is melted and bubbly.

Remove from the oven and top with lettuce leaves and tomato slices.

Cover with the top half of the hoagie roll.
