Maitake mushrooms are also known as ‘hen of the woods’ due to their unique appearance resembling the fluffed feathers of a nesting hen.

Preheat the oven to 375°F (190°C).

Cut the tops off the bell peppers and remove the seeds and membranes.

Heat olive oil in a pan and sauté the onion and garlic until translucent.

Add the maitake mushrooms and cook until tender.

Season with salt and black pepper.

Fill the bell peppers with the mushroom mixture.

Sprinkle breadcrumbs and parmesan cheese on top.

Place the stuffed bell peppers in a baking dish.

Bake for 25-30 minutes or until the peppers are tender and the cheese is melted and golden.
