Honey/Lemon/Ricotta Cupcakes with Lemon Cream Cheese Frosting

Preheat the oven to 350°F (175°C) and line a muffin tin with cupcake liners.

In a medium bowl, whisk together the flour, baking powder, and salt.

In a separate large bowl, cream together the butter, granulated sugar, honey, and lemon zest until light and fluffy.

Add the ricotta cheese, eggs, and vanilla extract to the butter mixture and mix until well combined.

Gradually add the dry ingredients to the wet ingredients, alternating with the milk, beginning and ending with the dry ingredients. Mix until just combined.

Divide the batter evenly among the cupcake liners, filling each about 2/3 full.

Bake for 18-20 minutes, or until a toothpick inserted into the center of a cupcake comes out clean.

Remove from the oven and let the cupcakes cool in the tin for 5 minutes, then transfer them to a wire rack to cool completely.

In a separate bowl, beat together the cream cheese, powdered sugar, and lemon juice until smooth and creamy.

Once the cupcakes are completely cooled, frost them with the cream cheese frosting.
