  2. In a large bowl, combine the rhubarb, sugar, lemon juice, and cornstarch. Mix well and set aside.
  3. In a separate bowl, whisk together the whole wheat flour, baking powder, and salt.
  4. Cut the unsalted butter into small pieces and add it to the flour mixture. Use your fingers or a pastry cutter to combine until the mixture resembles coarse crumbs.
  5. Stir in the milk and vanilla extract until just combined.
