In a saucepan, heat olive oil over medium heat. Add the onion and garlic, and sauté until softened.

Add the mushrooms and cook until they release their moisture.

Stir in the bulgur and cook for 2 minutes.

Gradually add the vegetable broth, 1/2 cup at a time, stirring frequently until the liquid is absorbed.

Continue adding broth and stirring until the bulgur is tender and creamy.

Stir in the spinach and cook until wilted.

Remove from heat and stir in the Parmesan cheese, salt, and black pepper.
