Bird’s nest noodles is a popular Chinese dish that gets its name from the nest-like appearance of the fried noodles. It is often served as a symbol of good luck and prosperity.

Cook the noodles according to the package instructions. Drain and set aside.

In a bowl, beat the eggs and season with salt and pepper.

Heat 1 tablespoon of vegetable oil in a frying pan over medium heat. Pour the beaten eggs into the pan and cook until set. Remove from heat and slice into thin strips.

In the same pan, heat another tablespoon of vegetable oil. Add the carrots, bell peppers, and spring onions. Stir-fry for 2-3 minutes until the vegetables are slightly tender.

Add the cooked noodles to the pan and stir-fry for another 2 minutes.

Add soy sauce, oyster sauce, salt, and pepper. Mix well to combine.

Serve the noodles topped with the sliced omelette strips.
