Instructions

  1. Preheat the oven to 350°F (175°C). Grease and flour a twinkie pan.
  2. In a medium bowl, whisk together the cake flour, cocoa powder, baking powder, and salt.
  3. In a separate large bowl, cream together the butter and granulated sugar until light and fluffy. Beat in the eggs one at a time, then stir in the vanilla extract.
  4. Gradually add the dry ingredients to the wet ingredients, alternating with the milk. Mix until just combined.
  5. Spoon the batter into the prepared twinkie pan, filling each cavity halfway.
  6. Bake for 12-15 minutes, or until a toothpick inserted into the center comes out clean.
  7. Remove from the oven and let cool in the pan for 5 minutes. Then transfer to a wire rack to cool completely.
  8. In the meantime, prepare the meringue filling. In a large bowl, beat the egg whites and cream of tartar until soft peaks form. Gradually add the powdered sugar and vanilla extract, and continue beating until stiff peaks form.
  9. Once the twinkies are completely cool, use a piping bag or a ziplock bag with the corner snipped off to fill each twinkie with the meringue filling.
  10. Serve and enjoy!
