Heat olive oil in a large skillet over medium heat. Add diced potatoes, onion, green bell pepper, and red bell pepper. Cook until potatoes are crispy and vegetables are softened, about 10-12 minutes.

In a separate bowl, whisk together eggs, salt, black pepper, and garlic powder.

Pour the egg mixture over the cooked potatoes and vegetables, spreading it evenly.

Cover the skillet and cook on low heat for 15 minutes, or until the eggs are set.

Sprinkle grated cheese, chopped fresh parsley, and crumbled cooked bacon on top.
