  2. Roll out the pie crust and line a pie dish with it.
  3. Toast the hazelnuts in a dry pan over medium heat until fragrant. Let them cool, then roughly chop them.
  4. In the same pan, heat the olive oil and sauté the onion and garlic until softened.
  5. Add the mixed herbs and spinach to the pan and cook until the spinach wilts.
  6. In a separate bowl, whisk together the eggs, milk, salt, and black pepper.
  7. Spread the sautéed vegetables and chopped hazelnuts evenly over the pie crust.
  8. Pour the egg mixture over the vegetables and hazelnuts.
