Cook the macaroni according to package instructions.

In a large pot, heat the olive oil over medium heat. Add the onion and garlic and sauté until softened.

Add the vegetable broth and cauliflower florets to the pot. Bring to a boil, then reduce heat and simmer until the cauliflower is tender.

Using an immersion blender, blend the cauliflower mixture until smooth.

Stir in the milk and cheddar cheese until melted and well combined.

Drain the cooked macaroni and add it to the pot. Season with salt and black pepper.
