Morning Glory Muffins were originally created in the 1970s by Chef Pam McKinstry for her Morning Glory Café on Nantucket Island, Massachusetts.

  1. Preheat the oven to 350°F (175°C). Grease a muffin tin or line with paper liners.
  2. In a large bowl, whisk together the whole wheat flour, baking powder, baking soda, cinnamon, and salt.
  3. In a separate bowl, combine the grated carrots, grated apple, chopped walnuts, raisins, and coconut flakes.
  4. In another bowl, beat the eggs. Add the honey, vegetable oil, and vanilla extract. Mix well.
  5. Gradually add the wet ingredients to the dry ingredients, stirring until just combined. Do not overmix.
  6. Spoon the batter into the prepared muffin tin, filling each cup about 3/4 full.
  7. Bake for 20-25 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
  8. Remove from the oven and allow the muffins to cool in the tin for 5 minutes. Then transfer them to a wire rack to cool completely.
  9. Serve and enjoy!
