Haupia Cake
Haupia is a traditional Hawaiian coconut pudding made from coconut milk and cornstarch. It is often used as a filling or topping for desserts.

Preheat the oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.

In a large bowl, combine the cake flour, granulated sugar, baking powder, and salt. Mix well.

Add the unsalted butter, coconut milk, and vanilla extract to the dry ingredients. Mix until smooth.

Divide the batter evenly between the prepared cake pans. Smooth the tops with a spatula.

Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted into the center comes out clean.

Remove the cakes from the oven and let them cool in the pans for 10 minutes. Then, transfer them to a wire rack to cool completely.

Once the cakes are completely cooled, place one cake layer on a serving plate. Spread the haupia filling evenly over the cake layer.

Place the second cake layer on top of the haupia filling.

In a separate bowl, whip the whipping cream and powdered sugar until stiff peaks form.

Frost the top and sides of the cake with the whipped cream.

Sprinkle toasted coconut flakes over the top of the cake.

Refrigerate the cake for at least 1 hour before serving.
