Preheat the oven to 375°F (190°C).

In a large bowl, combine the rhubarb, pomegranate seeds, and sugar. Let it sit for 10 minutes.

In a separate bowl, whisk together the flour, baking powder, and salt.

Cut the butter into small pieces and add it to the flour mixture. Use your hands or a pastry cutter to mix until it resembles coarse crumbs.

Stir in the milk and vanilla extract until just combined.

Pour the rhubarb and pomegranate mixture into a baking dish. Drop spoonfuls of the cobbler batter on top.

Bake for 40-45 minutes, or until the cobbler topping is golden brown and the fruit is bubbling.
