Hashbrown Breakfast Skillet
Hashbrowns were popularized in the United States by fast-food chains in the 1950s, and have since become a beloved breakfast staple.
This is vegetarian, gluten free and high protein recipe. Dish can be prepared in 30 minutes. Recipe requires some culinary experience (medium difficulty). Number of ingredients: 9.

Peel and grate the potatoes. Rinse and drain well.

Finely chop the onion and red bell pepper.

Heat olive oil in a large skillet over medium heat.

Add the grated potatoes, onion, and bell pepper to the skillet. Season with salt and black pepper. Cook for about 10 minutes, stirring occasionally, until the potatoes are golden brown and crispy.

Make four wells in the potato mixture and crack an egg into each well. Cook for another 5-7 minutes, until the egg whites are set but the yolks are still runny.

Sprinkle cheddar cheese and green onions over the skillet. Cover and cook for another 2-3 minutes, until the cheese is melted.

Remove from heat and let it rest for a minute.
