  1. Preheat the oven to 325°F (163°C). Crush the chocolate cookies and mix with melted butter. Press the mixture into the bottom of a 9-inch (23cm) springform pan.
  2. In a large bowl, beat the cream cheese and sugar until smooth. Add the Guinness beer and sour cream, and mix until well combined.
  3. Beat in the eggs one at a time, followed by the vanilla extract. Pour the mixture over the crust in the springform pan.
  4. Bake for 60 minutes, or until the center is set and the edges are slightly golden. Remove from the oven and let it cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
  5. In a microwave-safe bowl, melt the semi-sweet chocolate with the heavy cream. Stir until smooth. Pour the chocolate ganache over the cooled cheesecake.
  6. Refrigerate for at least 2 hours, or until the ganache is set. Serve chilled.
