Preheat the oven to 350°F (175°C).

In a saucepan, melt the guava paste with water over medium heat, stirring until smooth.

In a blender, combine the guava paste mixture, evaporated milk, sweetened condensed milk, eggs, and vanilla extract. Blend until well combined.

In a small saucepan, heat the sugar over medium heat until it melts and turns golden brown. Pour the caramelized sugar into a 9-inch round baking dish, swirling to coat the bottom.

Pour the custard mixture over the caramelized sugar in the baking dish.

Place the baking dish in a larger baking pan. Fill the larger pan with hot water halfway up the sides of the baking dish to create a water bath.

Bake for 40 minutes, or until the custard is set and a toothpick inserted into the center comes out clean.

Remove the baking dish from the water bath and let it cool for 10 minutes.

Refrigerate for at least 2 hours, or until completely chilled.

To serve, run a knife around the edges of the dish and invert onto a serving plate.
