  4. Remove the saucepan from the heat and quickly stir in the vanilla extract and baking soda. The mixture will bubble up, so be careful.
  5. Immediately pour the hot mixture onto the prepared baking sheet and spread it out evenly using a spatula.
  6. Sprinkle the shelled pistachios evenly over the hot brittle, pressing them gently into the surface.
  7. Let the brittle cool and harden for about 30 minutes.
  8. Once completely cooled, break the brittle into pieces and store in an airtight container.
