Cook the macaroni according to the package instructions. Drain and set aside.

In a large saucepan, melt the butter over medium heat. Stir in the flour and cook for 1-2 minutes, until golden brown.

Slowly whisk in the milk and cook until the mixture thickens, about 5 minutes.

Remove the saucepan from heat and stir in the cheddar cheese, gruyere cheese, Dijon mustard, salt, and black pepper until melted and smooth.
