Preheat the oven to 375°F (190°C). Grease two ramekins with butter and sprinkle with sugar.

Separate the egg yolks from the whites. In a mixing bowl, whisk the egg yolks with sugar until pale and creamy. Stir in the Grand Marnier and orange zest.

In a saucepan, melt the butter over medium heat. Stir in the flour and cook for 1 minute. Gradually whisk in the milk until smooth. Cook until thickened, stirring constantly.

Remove the saucepan from heat and let it cool slightly. Gradually whisk the milk mixture into the egg yolk mixture.

In a separate mixing bowl, beat the egg whites until stiff peaks form. Gently fold the egg whites into the souffle mixture.
