In a large bowl, whisk together the flour, sugar, baking powder, salt, and cinnamon. In a separate bowl, whisk together the milk, egg, and vanilla extract.

Gradually add the wet ingredients to the dry ingredients, stirring until just combined. Fold in the diced apples.

Heat vegetable oil in a deep pan or pot over medium heat.

Drop spoonfuls of the batter into the hot oil and fry until golden brown, flipping once. Remove with a slotted spoon and drain on paper towels.

Allow the fritters to rest for 10 minutes before dusting with powdered sugar. Serve warm.
