Gluten-Free Perogies
Perogies are a traditional dish in Eastern European cuisine and are often served during holidays and special occasions.

Boil the potatoes until tender, then mash them.

In a mixing bowl, combine the mashed potatoes, gluten-free flour, finely chopped onion, vegan butter, salt, and pepper. Mix well until a dough forms.

Divide the dough into small portions and roll each portion into a thin circle.

Place a spoonful of your desired filling (e.g., cheese, mushrooms, or sauerkraut) onto each dough circle.

Fold the dough over the filling and press the edges to seal.

Bring a large pot of salted water to a boil. Add the perogies and cook until they float to the surface, about 3-4 minutes.

Remove the perogies from the water and drain.

Heat olive oil in a skillet over medium heat. Fry the perogies until golden brown on both sides.

Serve hot with sour cream or your favorite dipping sauce.
