  1. In a medium bowl, whisk together flour, ginger, cinnamon, nutmeg, baking soda, and salt. Set aside.
  2. In a large bowl, cream together butter and brown sugar until light and fluffy. Mix in molasses, egg, and vanilla extract.
  3. Gradually add the dry ingredients to the wet ingredients, mixing well after each addition. Divide the dough in half and wrap each half in plastic wrap. Refrigerate for at least 1 hour.
  4. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  5. Roll out the dough on a lightly floured surface to about 1/4 inch thickness. Use gingerbread men cookie cutters to cut out shapes and place them on the prepared baking sheet.
  6. Bake for 8-10 minutes or until the edges are lightly browned. Allow to cool on the baking sheet for a few minutes, then transfer to a wire rack to cool completely.
  7. In a small bowl, whisk together icing sugar and milk until smooth. Decorate the gingerbread men with the icing as desired.
