Butterscotch is believed to have originated in Scotland and was traditionally made by boiling butter and brown sugar together.

Preheat the oven to 180°C.

In a mixing bowl, cream together the butter and brown sugar.

Add the eggs one at a time, mixing well after each addition.

Stir in the vanilla extract.

In a separate bowl, whisk together the flour and baking powder.

Gradually add the dry ingredients to the wet ingredients, mixing until just combined.

Fold in the butterscotch chips.

Pour the batter into a greased loaf pan.

Bake for 40 minutes or until a toothpick inserted into the center comes out clean.

Allow the loaf to cool for 10 minutes before removing from the pan.

Serve slices of the butterscotch bubble loaf with whipped cream and drizzle with butterscotch sauce.
