  2. In a medium bowl, combine the graham cracker crumbs and melted butter. Press the mixture into the bottom of a 9-inch (23 cm) springform pan to form the crust.
  3. In a large mixing bowl, beat the cream cheese, sugar, molasses, ginger, cinnamon, and cloves until smooth.
  4. Gradually add the flour, eggs, and vanilla extract, mixing well after each addition.
  5. Pour the batter over the crust in the springform pan.
  6. Bake for 60 minutes or until the center is set.
  7. Turn off the oven and let the cheesecake cool in the oven for 2 hours.
  8. Remove from the oven and refrigerate for at least 2 hours or overnight.
  9. Before serving, top with whipped cream and crushed gingerbread cookies.
