Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper.

In a medium bowl, whisk together the flour, baking soda, and salt.

In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy. Add the peanut butter, egg, and vanilla extract, and mix until well combined.

Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Fold in the miniature peanut butter cups and chocolate chips.

Drop large spoonfuls of dough onto the prepared baking sheet, spacing them about 2 inches apart. Press down slightly to flatten.

Bake for 12-15 minutes, or until the edges are golden brown. Remove from the oven and let cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
