Cook the brown rice according to package instructions. Set aside.

Trim the ends of the gai lan and cut into bite-sized pieces. Slice the shiitake mushrooms.

Heat vegetable oil in a large skillet or wok over medium heat. Add garlic and stir-fry for 1 minute.

Add shiitake mushrooms and stir-fry for 2-3 minutes until softened.

Add gai lan and stir-fry for another 2 minutes until wilted.

Push the vegetables to one side of the skillet and add cooked brown rice to the other side. Drizzle with soy sauce and sesame oil.

Stir-fry everything together for 2-3 minutes until well combined.

Season with salt and black pepper.

Remove from heat and let it rest for 5 minutes before serving.
