  1. Cook the brown rice according to package instructions. Set aside.
  2. Trim the ends of the gai lan and cut into bite-sized pieces. Slice the shiitake mushrooms.
  3. Heat vegetable oil in a large skillet or wok over medium heat. Add garlic and stir-fry for 1 minute.
  4. Add shiitake mushrooms and stir-fry for 2-3 minutes until softened.
  5. Add gai lan and stir-fry for another 2 minutes until wilted.
  6. Push the vegetables to one side of the skillet and add cooked brown rice to the other side. Drizzle with soy sauce and sesame oil.
  7. Stir-fry everything together for 2-3 minutes until well combined.
  8. Season with salt and black pepper.
  9. Remove from heat and let it rest for 5 minutes before serving.
  10. Serve hot and enjoy!
