  1. Preheat the oven to 350°F (175°C). Grease a baking dish.
  2. In a large bowl, combine the all-purpose flour, granulated sugar, and salt. Cut in the unsalted butter until the mixture resembles coarse crumbs.
  3. In a separate bowl, beat the egg and vanilla extract. Add the egg mixture to the flour mixture and mix until well combined.
  4. Press two-thirds of the mixture into the bottom of the prepared baking dish.
  5. In another bowl, mix together the fresh fruit, lemon juice, cornstarch, brown sugar, and cinnamon. Spread the fruit mixture evenly over the crust.
  6. Sprinkle the remaining crumb mixture and oats over the fruit.
  7. Bake for 40 minutes or until the top is golden brown.
  8. Allow to cool for 30 minutes before cutting into bars.
  9. Serve and enjoy!
