Preheat the oven to 180°C (350°F).

Roll out the shortcrust pastry and line a 9-inch tart tin. Spread the raspberry jam over the pastry.

In a mixing bowl, cream together the butter and caster sugar until light and fluffy. Stir in the ground almonds.

Beat in the eggs one at a time, then add the almond extract.

Pour the almond mixture over the jam in the tart tin.

Sprinkle flaked almonds on top.

Bake in the preheated oven for 40 minutes or until golden brown.

Allow to cool for 30 minutes before serving.
